Pico de Gallo..

3 cups of chopped tomato. Put into a large mixing bowl.

Chop 1/2 onion, 5 tbsps of cilantro, 2 medium jalapenos, 1 sorreno pepper, 2 tbsp green onion, 3 tbsp of garlic, 1 tbsp of olive oil, salt and pepper, lime juice. Combine in a food processor.

Add to bowl with tomatoes. Mix. Sesaon with more salt and pepper and lime juice for taste.

Green Salsa:

basically the same exact ingredients except boil 3 cups of tomatillas with the onion. Put everything into a blender.. I make both on the regular..

Pico with cucumber is the business. My girl makes it and there is no exact measurements but i know it has red onions, green onions, ripe vine tomatoes, one jalepeno, half a English cucumber, salt, cilatnro, lime juice, and chili sauce. The bizznezz.

I feel you on that one. My aunt makes it the exact same way but throws in some diced avocado and lime juice. Shit is on hit!

A Mexican giving up their salsa recipe is taboo. I'll keep my shit secret but I'll tell you this: I use only molcajetes for the bombest taste.

My brother's friend opened up a mission style burrito shop here a few years ago and I work there on and off when they need help. They got 3 salsas, a salsa fresca which is mild and basically pico de gallo, a roasted salsa which is called medium but is still pretty hot, and a picante which is hot as fuck. I'll post up the exact recipes in the next couple days because I can't remember everything off top but they're all slap. I'll also post up their guacamole recipe.

tomato, jalapenos, WHITE onion, cilantro lime/lemon (i use 1 of both) and salt is all you need for pico de gallo...fuck all the fancy shit....i stay dipped in that kind of salsa

for hot salsa for burritos and tacos trade the tomato with tomatillios and roast everything except the lime on the tortilla pan....

Guacamole

8 avocados
2 tablespoons lime juice
2 teaspoons lemon juice
1 tablespoon seasoning salt
1 teaspoon garlic powder
1/4 teaspoon cumin

Scrape the avocado out of it's skin and remove all the pits/cores from them. Combine all ingredients in a food processor and mix until the avocado chunks are all gone. This makes a decent amount. When mixing it in the food processor don't leave it running for more than like 10 seconds at a time or else the blade will heat and start cooking the avocado which you don't want.

Salsa Fresca

10 cups of finely diced tomatoes
5 cups of finely diced onions
1/3 cup lime juice
1/3 cup lemon juice
2 cups cilantro
1 teaspoon salt

Combine all ingredients in large container and stir until everything is dispersed evenly. This makes a pretty large amount so you may want to cut the amounts in half.
