Yeah, that was a good show. So Luke cage is next and then Daredevil season 2? Then isn't it supposed to be Iron Fist and then all of them in The Defenders?

Never heard that rumor, and it makes no sense. They've implanted a number of direct nods and ties to Iron Fist in both AKA and DD.

Other shows making their way through the mill are Cloak & Dagger, Moon Knight, and a new Blade series starring Wesley Snipes.

Word. I got that news a couple of hours after posting.
Fan hype for Jin Berenthal is about the only way a Punisher series would go from non-developing to cancelling an entire series to produce a spin off for a supporting character. That's not how the industry works, really.
We'd have heard more about potential troubles in landing Iron Fist production crew before a pickup rumor like Punisher replacing him would take hold.
It would be sick to have his own show, though.
