dont judge it by that one time you had it...ive had some terrible al pastor...honestly more bad than good...but al pastor is bomb...some is made waaaay to fucking greasy and not properly...

true al pastor is done by slicing marinated pork rotating on a flame...each piece of meat has a nice crust on it so instead of just searing the outside all meat is crispy seared and tender...it seems a lot of palce just have the meat marinating and then saute it w loads of greasy mess.

true al pastor you cna only get in mexico...those little joints that only open at 9pm and stay till 2am.
