Sorry to be the one to spoil the trick, but...

Check it.. no matter what 2 digit number you choose, when subtracted by the sum of the 2 single digit number you will always get an asnwer in the multiple of 9 (i.e. 0, 9, 18, 27, 36, etc.). Therefore the symbols are the same for that particular multiple. It throws you off by giving different symbols every time you do it over.
