Ingredients:



Quick Sear Buffalo



Cut out the bowl (save the inside to fry and make bomb croûtons)



Rest (I know the OG recipe says not to but fuck that)



Deglaze w/Marsala (again, OG recipe is a homo)



Using Portobellas and Red Onion (have shallot on hand but didn't think this was a good use)





Gran Queso Roth Kase (this is like Manchego but made from cow's milk instead of sheep)



Stuff it of course:



(added parsley from my garden & some scallions)





Added some bacon cause why the fuck not?







Was curious how much this things weighed. 2 1/2lbs!



Flatten that shit out!



Will post final product later. Not going to wait 24 hours.

I know the OG recipe called for mustard and shit, I can't stand mustard. I plan to serve this with a horseradish (fresh from my garden) cream.

Final Product!


...the verdict :/

The sandwich is good but given the cost of things (about 25$ if you have the cognac/marsala on hand) and the effort put into it, it's not worth it. The whole time eating this I was thinking, I much rather be eating steak w/sautéed mushrooms and a dutch crunch roll.

You can get bison at most grocery stores these days. It's awesome.

Infact I just ate a bacon bison cheeseburger.
Only ground. It's typically in those little square packages next to the lamb and 85/15 organic grass fed beef.

Yea whole foods is good because they stock all cuts including NY.

There is also a few middle of nowhere Bison ranches on the west coast you can buy from.
