Is this the game where theres a "character" that is actually two girls that you control? If so, the other day I was on campus and I saw some cats in the lobby playing this game or a previous version or something. They were playing the game on a lap top and had two 360 controllers plugged in. I stopped and watched it, and the person they were fighting was this silver/white girl or guy that looked like someone off of Yu Yu hakusho.

Yea. Hisui & Kohaku is the "character" you're referring to that is a set of maids. You can also play them individually and Hisui has a mechanical version too.

Melty Blood is basicly a Tsukihime fighting game. Although with the new addition of Ryougi Shiki it's turning into a simply just Type-Moon game.

They were probably playing Act Cadenza Ver.B2. That's like 2 versions ago but considering that Actress Again hasn't had a port it's all anyone plays.

But please understand that it is a bit slower than most shows and there is a lot between the lines.
