There's a number of ways to chop samples. A couple ways I do is to listen to which record I'm gonna chop up and play it directly into my computer through the sound card, and record with cool edit pro. From there I go over the whole record that was recorded and start looking for parts I would like to use and cut them out. Then I make a folder named after the album, then another one named after the track, and then the file is usually called whatever the sound is, or whatever the sound feels like to me.

Another way I use sometimes is sampling directly into my kurzweil. I would definitely recommend sampling it into the computer though first, so you can chop it up, add fx, etc... then sample it into the keyboard. That way is much easier for me.
